Ingredients:
- 6-8 garlic cloves, chopped
- One large red or yellow onion, chopped
- One head of broccoli, chopped
- One green pepper, chopped
- One red pepper, chopped
- 32 oz can chickpeas
- 32 oz can crushed tomatoes
- Salt & pepper to taste
- 1/4 tsp crushed cardamom
- 1/4 Tbsp cumin
- Olive oil
Prepare:
- Prepare rice or quinoa of choice, 20-ish minutes
- Sautée onion and garlic in olive oil, add all veggies until soften
- Add can of diced tomatoes and spices
- Let simmer for 10-15 minutes
