Chad's Rocky Mountain Stew

More veggies, please!

Ingredients:

  • 6-8 garlic cloves, chopped
  • One large red or yellow onion, chopped
  • One head of broccoli, chopped
  • One green pepper, chopped
  • One red pepper, chopped
  • 32 oz can chickpeas
  • 32 oz can crushed tomatoes
  • Salt & pepper to taste
  • 1/4 tsp crushed cardamom
  • 1/4 Tbsp cumin
  • Olive oil

Prepare:

  • Prepare rice or quinoa of choice, 20-ish minutes
  • Sautée onion and garlic in olive oil, add all veggies until soften
  • Add can of diced tomatoes and spices
  • Let simmer for 10-15 minutes

Garnish:

  • Fresh basil
  • Pumpkin seeds

As you can see, we try to keep it simple over here at TF! When you are working with plant based meals, you really do get back to basics.
